Blueberry Protein Loaf (gluten free)

Ingredients

3 cups almond meal

4 free range eggs

2 teaspoons baking powder

2 tablespoons Greek Yoghurt

1 tablespoon olive oil

1 teaspoon cinnamon

1 1/2 cups blueberries - frozen is fine

1 apple cut into small pieces

1 tablespoon honey if required

Method

Heat oven to about 170.Place all the dry ingredients in a large mixing bowl Add in eggs, oil, yoghurt and honey and mix well to make a smooth batter and then fold in blueberries and apple. Pour into a loaf tin (make sure it is greased) and bake for about 35-40 minutes. Turn out once cool.
