Banana Bread (gluten free)


3 ripe bananas medium sized - mashed

3 free range eggs

1/2 teaspoon bicarb soda

1/2 teaspoon cinnamon

1 teaspoon vanilla

 1 tablespoon raw honey

1 tablespoon lemon juice

2 tablespoon greek yoghurt

2 tablespoon extra virgin olive oil

2 cups almond meal

1/2 cup coconut (optional)

1/2 cup walnut pieces

1/4 cup ground flaxseed or LSA

Blend everything except the almond meal, LSA, coconut and walnut. Or you can mix well in a large bowl. Once blended, add all the rest of the ingredients, mix well and pour batter into a well oiled cake tin. Cook at 160 for 45 - 50 mins (you can cover the top with foil after about 30 mins to stop it getting too brown). Let bread cool in the tin before turning it out.
