Peanut and Date Muesli Bars

Muesli Bars


1 cup medjool dates

¼ cup peanut or almond butter – (no sugar, no salt)

1/4 cup honey (or maple syrup)

1 cup roasted unsalted almonds, loosely chopped

1 1/2 cups rolled oats (these can be toasted if preferred)

2 tablespoons LSA

2 tablespoons cranberries (or other dried fruit – optional)

1/3 cup desiccated coconut (optional)


Place all dry ingredients in a bowl.

Process dates in food processer until chopped into small pieces, almost like a paste – then add to the dry ingredients.

Warm honey and peanut butter in a small saucepan over low heat or in the microwave, mix thoroughly then pour over dry ingredients and dates.

Mix everything together thoroughly

Transfer into a Tupperware container or baking dish and press down until mixture is uniformly  1.5 cm high or thereabouts- depending on desired thickness of the bars . Cover and place in freezer for at least 30 mins, then remove bars and chop into 10 even bars.

Store in an airtight container in the fridge for up to 5 days or can be kept in the freezer.

Ideal for lunch boxes.
